Crappie Pattie
- Crappie fillets (skinless fillets)
- Bread crumbs
- Eggs
- Can of condensed milk
- Large Zip-lock bag
- Dump in the fillets into the Zip-lock, Season with salt and pepper if not done. If you made Crappie over the camp fire, throw in the cooked onions as well
- add about a handful of bread crumbs, You can use more if you need to spread the meal.
- Drop in the eggs, about two eggs per handful of bread crumbs
- Pour in just enough condensed milk to make a batter a little thicker than pancake batter
- Get the skillet hot and use a little olive oil to fry with. Olive oil is great for skillet cooking over the camp fire because it has a high burn temp.
- Use a spoon or pour the batter from the bag into the hot skillet. make the patties about 3 inches in diameter
- Let the patties sit for a minute and check the bottom with a spatula.
- Once the bottom is brown flip it
- Once cooked plate the patties
You can use the left over oil and condensed milk to make a white gravy
- Take the skillet off the fire and slowly pour the condensed milk into the skillet
- Constantly stir the milk until it thickens
- Season to taste with salt and pepper
- Pour the Gravy over the patties
